Directions
- Heat oven to 400°F.
- Scrub the beets of similar size in cold water to remove soil. Dry.
- Line a cookie sheet with foil; place beets in the center; drizzle with olive oil and sprinkle with salt; close foil around beets, sealing ends.
- Roast until tender, from 35-55 minutes, depending on size. Cool, then rub with a dry paper towel to remove skin
