Ingredients
- 3 slices bacon, cubed, or 2 tablespoons olive oil
- 1 medium shallot, peeled and sliced
- ¼ cup dried cranberries
- ¼ teaspoon salt
- ¼ teaspoon freshly ground black pepper
- 8 ½ cups green beans, trimmed of stems
- 6 tablespoons crumbled feta cheese
Directions
- Place bacon or oil in large skillet. Cook over medium-high heat, stirring often, until crisp, 8-10 minutes. Using a slotted spoon, transfer bacon to plate.
- Reduce heat to medium; add sliced shallots and cranberries to skillet and season with salt and pepper. Cook, stirring occasionally, until shallot is slightly softened, about 3 minutes. Add green beans and 2 tablespoons water. Cover and cook until beans are crisp-tender, about 5 minutes.
- Transfer mixture to serving platter; top with feta cheese
