Roasted Beets


Ingredients

  • beets
  • olive oil
  • salt

Directions

  1. Heat oven to 400°F.
  2. Scrub the beets of similar size in cold water to remove soil. Dry.
  3. Line a cookie sheet with foil; place beets in the center; drizzle with olive oil and sprinkle with salt; close foil around beets, sealing ends.
  4. Roast until tender, from 35-55 minutes, depending on size. Cool, then rub with a dry paper towel to remove skin
